This was a cheat meal. My students ( i am doing my student teaching) run a custard / ice cream stand in town. Its the best damn place I have ever been to, been going once a week. They sure hook me up as that shortcake was piled an inch over the top of the pint

Usually I can buy trade joes dough and fit smaller pizzas into my calories, but today I just wanted a big ass pizza and bought an entire pillsbury pizza dough and loaded it with cut up steak and veggies and threw a ton of cheese on there.

    Just felt like pizza!

100x cheaper than eating out. A large pizza is around 10-11$. The only thing i had to buy was the pizza dough at 2.20$ i had cheese, veggies, and I bought some cut up steak that was on sale for around 2.50$/lb.. Not too bad!

How funny....i was craving pumpkin pie today...it's the weather..it's halloween time..almost thanksgiving, and supposed to snow here tomorrow..yuck....but anyway, i figure pumpkin is healthy and good for you..there must be a "healthy" recipe for pumpkin pie...i found this recipe which i'm going to try this weekend..not sure about the crust yet, but i don't need crust

sugar free fat free pumpkin pie filling

    Ingredients
    1 (16 oz.) can pumpkin
2 sm. (4 serving) pkg. Jello sugar free vanilla pudding & pie filling
    2 c. skim milk
    2 tsp. pumpkin pie spice

    Directions

Pour milk into a 2 quart saucepan. Stir in pudding and pumpkin pie spice until dissolved. Add pumpkin and blend until well combined. Heat mixture on medium heat until it boils. Gently boil for 1 minute, stirring to prevent burning. Pour into cooled 9" crust. Chill. Mixture will thicken as it cools.
This recipe is acceptable for low cholesterol, low fat sugar free and low sodium diets. The pudding contains Nutra Sweet so it is not appropriate for those who must avoid this sweetener.
